PERANZANA OR PROVENZALE The origin of this olive is Apulian. In particular in the province of Foggia. It is a dual-purpose olive of important dimensions with a large amount of pulp compared to the stone. From its pressing derives an oil of absolute excellence. The positive characteristics are given by a very evident medium fruitiness and correct and pleasantly aligned bitter and spicy tones. All this blends with fresh herbaceous hints that recall aromatic herbs, radicchio and artichoke. It resists oxidation for a long time and is appreciated by the most demanding users.
